Now I’m wondering what would happen if some part of Sue got cut off? Would she be able to just stitch it back on? She already has a lot of stitch marks, which begs the question how she died, and did she end up in several pieces because of that, or if all that damage was post-mortem? And also how do zombies work in general? Do you have to just be bitten by one and die later, or die because of the bite?

The stitches are all post-zombifying, though. Zombies can transmit infection by bite, although it’s considered an assault. There are agencies that provide cloned flesh (like the hearts Sue bought in the first storyline) for inhuman consumption.
Zombies can also be created through magic ritual or scientifically engineered plague or certain folklore methods, such as cats leaping over open graves.
