The “taur” part of Minotaur is referring to the bull part (taurus), though. It’s “The bull of Minos”. I believe the spelling similarity to “Centaur” is just a coincidence.
But I think we can take “lycanthropy” to be a generalization similar to how “geology” is used for worlds other than Earth.

Feel the same way when everyone makes a half horse thing and call it a “taur”. I’m pretty sure Mino”taurs” are not half horse and half cow.
