Zombies aren’t dead, they are undead. There’s an underlying force that keeps them moving and in Sue’s case, apperently from decaying as well.
I’ve been writing a short story and my version of zombies are that they eat the living because they are incapable of generating and maintaining their own blood, so they take it from living creatures.
They still retain some body and organ functions as long as they keep a fresh supply of blood coming. Fresh blood also keeps their bodies from decaying.
So with that headcanon in place I could see Sue’s body still releasing pheromones.
Even if Sue doesn’t make pheromones the three guys she beat up did. Pheromones connected to fright and pain, from three different guys, all from close enough to Sue that she got stained a bit with them would absolutely mean she got in a fight with them.

I like that idea. It’s got a creepy zombie/vampire hybrid to it.
